Take slender brinjals apply to oil and place it on the stove top and burn it until we get nice color.
After it cools down remove the skin and then smash the brinjal and put aside.
Heat oil in a pan add, mustard seeds, cumin seeds, curry leaves, turmeric powder, green chillies, dried red chillies, hing and then add chopped onions.
After the spices are cooked and the onion becomes golden brow add tamarind juice with jaggery as per required for taste.
Let all the ingredients get cooked, switch off the flame and then add the smashed brinjal to the mixture, mix it well and it’s ready to be served with steaming rice or curd rice.
