In a small bowl, stir sugar, corn-starch, vanilla extract, lemon juice and the salt together then add cherries. Gently toss to combine. Set aside. I used unpitted cherries so I haven’t added sugar.
In a large bowl add maida and the chilled butter, cut butter into small pieces and mix them till it becomes soft dough.
Leave it aside for 20-30 minutes. Take a small portion from the dough and flatten it into a chapatti shape with the help of a rolling pin.
Take the crust mould, plate or tin in which you would want to bake the pie and place the flatten dough according to the size and shape mould it accordingly.
After the mould is ready spread the cherries on the mould accordingly which we already kept aside.
Flatten another ball from the dough for the upper portion or to cover the cherries. You can cut and shape it as per your choice. And brush it with unsalted butter over and around the curst for crisp.
Meanwhile for baking the cherry pie pre-heat the pressure cooker or a deep pan/kadai with salt or sand base. You can microwave it for 10 minutes.
Place a stand and then place the cherry pie plate or mould or tin carefully and let it bake for 15-20 minutes keep checking after 15 minutes don’t over bake it.
It’s READY but now it sucks to wait till it cools down after it cools you can serve with heavy cream or whipped cream or vanilla ice cream...!!
